A conversion from a lightweight 50-year old camping trailer to a commercial kitchen involves more than meets the eye. With a 6-burner griddle, pizza oven, double fryer, Italian espresso machine, twin beer taps and a load of refrigeration on board, this Airstream got a brand new chassis and suspension to handle over 4,000 lbs. of equipment. Before the kitchen equipment went in, stainless steel walls and ceiling plus sealed compliant flooring and a sophisticated fire suppression system were all installed to meet State and Local health department requirements.
